Cornbread waffles are so easy and so versatile.  This is a basic recipe for your waffle iron.  You can add cooked bacon, sausage, ham, cheese, spices or just about whatever you like to this recipe to make it your own.  Serve these cornbread waffles for breakfast with butter and maple syrup, serve them with a meal as your bread, pile chili on top and sprinkle with cheese.  There are so many great possibilities with this recipe.  Make pizza cornbread waffles by adding pepperoni and cheese with Italian spices.  They can be frozen and reheated in the toaster or microwave and will keep in the fridge for several days.  You can double or triple the recipe.  I love that you can make so many different kinds of these little cornbread waffles and have them on hand for snacks, breakfast or just anytime you want something different. Let us know how you used this basic recipe to make your own waffles for your family and friends. 1 cup yellow cornmeal 1 egg 1/2 cup buttermilk 1/2 cup frozen corn, uncooked (could use fresh corn or canned drained corn.) 1 tablespoon bacon drippings or cooking oil Mix all ingredients together with a spoon.  Spray waffle iron with cooking spray. Cook 1 1/2 to 2 minutes or until they get as brown as you like them.  I use about 1/4 cup batter for each waffle. Makes 6 waffles.  Enjoy!
