  • 1 lb grnd beef
  • 1 sm onion minced (1/4 c.)
  • 1 x garlic clove finely minced
  • 1 Tbsp. chili pwdr - (to 2)
  • 1 Tbsp. Original Bisquick
  • 3 Tbsp. water
  • 1 can whole tomatoes - (14 1/2 ounce) undrained
  • 1 can whole kernel corn - (16 ounce) liquid removed
  • 1 tsp salt
  • 3/4 c. Original Bisquick
  • 3/4 c. yellow cornmeal
  • 2/3 c. lowfat milk
  • 1 x egg

  1. Heat oven to 350 degrees. Cook beef, onion and garlic in 2-qt saucepan over medium heat, stirring frequently, till beef is brown; drain.
  2. Mix chili pwdr, 1 Tbsp. Bisquick and the water; stir into beef mix. Stir in tomatoes, corn and salt, breaking up tomatoes. Heat to boiling, stirring frequently.
  3. Pour into ungreased square baking dish, 8 by 8 by 2 inches, or possibly 2-qt casserole. Stir remaining ingredients till blended; pour over beef mix. Bake 50 to 60 min or possibly till crust is golden.
  4. This recipe yields 8 servings.
  5. High Altitude (3500-6500 ft): Heat oven to 375 degrees. Bake 50 to 55 min.
  6. Comments: Serve with a mixed-greens salad, red and green grapes and brownies for dessert.
