- Saute/fry onions and chile in butter till onions are soft but not brown. Add in stock, light cream and wine and bring to a boil. Add in polenta, lower heat and stir constantly till thick (4 5 min). Add in corn puree and cook, stirring constantly for 3 min more. Correct seasoning with salt and pepper. Stir in herbs just before serving.
- NOTES :*rosemary, chives and parsley.
