  • 1/3 c. Fresh lime juice
  • 1/4 c. Orange marmalade
  • 3 lrg Garlic cloves chopped, mashed with
  • 1 tsp Salt
  • 1/2 c. Fresh coriander sprigs washed well, spun dry, and minced fine
  • 2 Tbsp. Extra virgin olive oil
  • 1 Tbsp. Soy sauce
  • 1/2 tsp Dry warm red pepper flakes
  • 1 lb Large shrimp - (21 to 24) shelled, leaving tail and first shell section intact, and if you like, deveined Fresh coriander sprigs for garnish

  1. In a measuring c. whisk together lime juice, marmalade, garlic paste, coriander, 1 Tbsp. oil, soy sauce, red pepper flakes, and salt and pepper to taste and reserve 1/4 c. mix in a small bowl or possibly ramekin for dipping. In a large sealable plastic bag combine shrimp with remaining mix and marinate, chilled, tossing occasionally to coat shrimp, 45 min.
  2. Drain shrimp and lightly pat dry between paper towels. In a large non-stick skillet heat 1 1/2 tsp. oil over moderately-high heat till warm but not smoking and saute/fry half of shrimp till golden and cooked through, about 1 1/2 min on each side. Saute/fry remaining shrimp in remaining 1 tsp. oil in same manner.
  3. Garnish shrimp with coriander sprigs and serve with reserved dipping sauce.
  4. This recipe yields approximately 21 to 24 hors d'oeuvres.
