- 2 cups red wine
- 5 slices thickly-cut bacon, cut into 1-inch pieces
- 1 tablespoon olive oil
- 1 medium onion, diced
- 2 garlic cloves, chopped
- 2 tablespoons flour whisked with 2 tablespoons softened butter
- 1 1/2 cups chicken stock
- 2 sprigs fresh thyme
- 2 bay leaves
- salt and pepper to taste
