Q. What should I use on cooked corn: regular or flavored butter?

A. You've somehow managed to complicate a simple culinary act, so I’m going to try to work with you here. The foundation of cooking style often rests with being humble. This means having the confidence to let the natural flavors of the food be the star of the show by resisting the urge to mask it with a fancy flavored topping.

There are only three things that should be put on corn; a sprinkle of salt, a conservative dollop of regular butter and your teeth. A cob of corn is like the now elder Ozzy Osbourne. Simple, yet has earned the right to be the star. The butter and salt are much like the guitarist and drummer in his band. They play an important role in making the star stand-out but should never be the main focus. When there is a struggle as to who is the star, the whole affair ends up messier than a teenager sporting braces in a corn eating contest.

However having cooking style also means being able to assess the circumstances and maneuver quickly in a different direction if required. For instance there are rare occasions when you’ll bring home a dozen tasteless corn through no fault of your own. It’s much like Ozzy becoming increasingly incoherent during a concert. This is the time the guitarist, or butter in this case, must step in to be the star. At this point your given the green light to show off your flavored butter creations and slather it on that cow’s corn! Here’s one you can try!

Mix 1/3 cup softened unsalted butter with 1 tsp minced garlic, 1 tsp chili powder, 1 tsp freshly squeezed lime juice and a couple pinches each of salt and pepper.
