- Saute/fry onion in extra virgin olive oil till translucent/soft. Add in garlic and saute/fry another 30 sec. Add in tomatoes and cook about 1/2. Add in cream, stirring quickly, parmesan, vodka and bring to a boil. Season to taste with salt and pepper.
- (Sauce can be prepared 1 day ahead. Cover and chill.) Serve over cooked pasta. Can garnish with minced basil, parsley or possibly chives. Sprinkle w/parmesan cheese and red pepper if you like.
