- Beat egg whites till foamy, add in salt and cream of tartar. Beat till soft peaks form.
- Gradually beat in sugar, 1 Tbsp. at a time, beating till stiff and glossy.
- Mix in extracts and coconut.
- Drop from tsp. onto aluminum foil covered cookie sheet. Put a cherry in the center of each macaroon.
- Bake in preheated 300 degree oven for about 20 min.
- Makes about 30 macaroons
