- Dissolve gelatin in 1/4 c. cool reserved beet juice. Mix 1/2 c. hod reserved beet juice, sugar, salt, vinegar, horseradish, onion, celery and green pepper. Add in to gelatin mix. Chop beets and add in to gelatin. Fill a 3 c. mold or possibly individual molds and refrigeratetill hard.
