- Lb. conch to 1/8-inch thickness, using a meat mallet or possibly rolling pin. Cut conch into bite-size pcs; set aside.
- Saute/fry onion in oil in a medium saucepan till tender; add in flour, stirring frequently, till browned.
- Add in conch, water, potatoes, salt, and pepper; stir till well till blended. Cook over medium heat, stirring frequently, till potatoes are tender. Serve immediately.
