,%20it%20was%20decided:%20roast%20chicken%20with%20egg%20sauce.%3C/p%3E%3Cp%3EI%20wish%20I%20could%20say%20the%20egg%20sauce%20was%20a%20revelation%20%E2%80%93it%20was%20a%20bit%20like%20roast%20chicken%20with%20a%20side%20of%20egg%20salad%20-%20but%20it%20was%20enough%20to%20see%20the%20contented%20look%20on%20Rod%E2%80%99s%20face.%20And%20It%20did%20turn%20the%20discussion%20to%20old%20family%20recipes.%20%22I%20wonder%20what%20foods%20Augustin%20will%20remember%20fondly%20from%20his%20childhood?%22%20I%20thought%20to%20myself.%20What%20I%20actually%20said%20aloud%20(according%20to%20G)%20was%20%E2%80%9CI%20wonder%20what%20recipe%20can%20I%20invent%20that%20Augustin%20will%20annoy%20his%20future%20wife%20with%2030%20years%20from%20now.%E2%80%9D%20Apparently%20(also%20according%20to%20G.)%20this%20is%20not%20at%20all%20the%20same%20thing.%20I%20don%E2%80%99t%20see%20it.%20Goes%20to%20show%20you,%20the%20kid%E2%80%99s%20not%20even%20three%20months%20old,%20and%20already%20my%20objectivity%20on%20the%20subject%20is%20shot%20to%20hell.%3C/p%3E%3Cp%3EThough%20Augustin%20is%20not%20yet%20old%20enough%20to%20hold%20a%20spoon%20%E2%80%93%20he%E2%80%99s%20not%20even%20found%20his%20thumb%20-%20I%E2%80%99ve%20decided%20that%20one%20of%20his%20favorite%20foods%20should%20be%20rice%20pudding%20%E2%80%93%20because%20it%E2%80%99s%20one%20of%20my%20favorite%20foods.%20(Oops.%20There%E2%80%99s%20that%20objectivity%20buzzer%20going%20off%20again.)%20Side-stepping%20the%20psychoanalytic%20implications%20of%20my%20choosing%20my%20son's%20favorite%20dish%20%E2%80%93%20I%20do%20think%20of%20rice%20pudding%20as%20highly%20recommended%20comfort%20food:%20sweet,%20creamy,%20and%20overwhelmingly%20beige.%20(I%20guess%20I%20should%20apologize%20for%20the%20quality%20of%20the%20pictures%20in%20this%20post%20%E2%80%93%20comfort%20food%20is%20almost%20never%20photogenic.)%3C/p%3E%3Cp%3EInstead%20of%20my%20standard%20recipe,%20I%20decided%20to%20try%20one%20with%20soy%20milk%20that%20I%20found%20in%20Food%20&%20Wine%20magazine.%20It%20was%20from%20an%20article%20about%20Joe%20Bastianich,%20a%20restaurateur%20(and%20Batali%20wingman)%20who%20runs%20marathons.%20This%20is%20his%20morning%20carb/protein%20fix.%20I%20don%E2%80%99t%20run%20marathons%20(I%20don%E2%80%99t%20run%20anywhere),%20so%20perhaps%20I%20should%20eat%20this%20less%20often%20that%20he%20does%E2%80%A6but%20it%20turned%20out%20so%20well%20that%20it%20might%20become%20a%20hard%20habit%20to%20break.%20Bastianich%20poaches%20fresh%20figs%20in%20his%20recipe%20%E2%80%93%20I%20used%20dried,%20soaked%20in%20Calvados%20for%20an%20extra%20kick.%3C/p%3E%3Cp%3EIf%20I%20were%20making%20this%20for%20dinner%20guests,%20I%20think%20I%E2%80%99d%20use%20the%20creamier%20Arborio%20rice%20%E2%80%93%20but%20for%20breakfast%20or%20a%20midnight%20snack%20%E2%80%93%20my%20favorite%20rice%20pudding%20moments%20%E2%80%93%20I%20think%20I%E2%80%99d%20use%20the%20heartier%20brown%20rice.%20I%E2%80%99ve%20never%20cooked%20with%20soy%20milk%20before%20%E2%80%93%20I%20was%20expecting%20something%20a%20bit%20sour%20%E2%80%93%20too%20hippy%20happy%20granola%20crunchy%20to%20be%20really%20good%20%E2%80%93%20but%20I%20was%20surprised%20at%20the%20extra%20depth%20it%20gave%20the%20pudding.%20A%20perfect%20set%20up%20for%20the%20bass%20note%20of%20the%20marinated%20figs.%3C/p%3E%3Cp%3EWhen%20Augustin%20gets%20off%20the%20all%20milk%20diet,%20he%20can%20pick%20his%20own%20favorite%20food.%20For%20now,%20this%20is%20at%20the%20top%20of%20my/his/our%20list.%3C/p%3E%3Cp%3EIn%20a%20small%20saucepan,%20bring%20water%20to%20a%20boil,%20add%20rice,%20lower%20heat,%20and%20simmer%20over%20until%20most%20of%20the%20water%20has%20been%20absorbed%20(about%2010-12%20minutes).%20In%20the%20meantime,%20combine%20figs,%20sugar%20and%20Calvados%20in%20a%20small%20bowl,%20set%20aside.%3C/p%3E%3Cp%3EKeeping%20the%20heat%20low,%20add%201/3%20cup%20soy%20milk,%20stir%20constantly%20until%20almost%20absorbed.%20Continue%20adding%20the%20soy%20milk,%201/3%20cup%20at%20a%20time,%20and%20stirring%20constantly%20until%20it%20is%20absorbed%20between%20additions.%20This%20is%20basically%20a%20risotto%20technique%20%E2%80%93%20be%20prepared%20for%20a%20half%20hour%20of%20constant%20stirring.%20I%20find%20it%20very%20zen-like.%20Relaxing.%20Add%20the%20fig%20mixture%20at%20the%2020%20minute%20mark.%20The%20pudding%20is%20done%20when%20the%20rice%20is%20tender%20and%20you%20still%20have%20a%20very%20loose%20but%20creamy%20liquid%20in%20the%20pot%20(if%20you%20let%20too%20much%20milk%20evaporate,%20the%20pudding%20will%20dry%20out%20when%20cooled.)%3C/p%3E%3Cp%3ESpoon%20into%204%20small%20ovenproof%20ramekins%20and%20serve%20hot%20or%20cold.%20I%20like%20my%20rice%20pudding%20from%20the%20fridge%20%E2%80%93%20but%20no%20matter%20what%20you%20do,%20an%20ugly%20skin%20forms%20on%20top.%20My%20solution%20%E2%80%93%20add%20an%20extra%20sprinkle%20of%20Demerara%20sugar%20to%20the%20top,%20and%20broil%20it%20for%20a%20minute%20like%20a%20cr%C3%A8me%20brul%C3%A9e%20%E2%80%93%20you%20get%20a%20great%20contrast%20between%20creamy%20cold%20and%20crackling%20hot!%3C/p%3E%3Cp%3EMakes%204%20very%20polite%20portions%20%E2%80%93%20or%203%20heartier%20ones%3C/p%3E){kind=link}
