Ингредиенты

  • 1 lb string beans trimmed (or possibly 1 lb asparagus, peeled and trimmed)
  • 1/2 c. extra virgin olive oil
  • 1 lrg shallot finely chopped
  • 1 Tbsp. Dijon mustard
  • 1/4 c. Georgian or possibly balsamic vinegar
  • 2 Tbsp. Polish vodka
  • 1 Tbsp. sumakh* Salt to taste Freshly-grnd black pepper to taste
  • 2 x hard-boiled Large eggs finely minced
  • 1 x red bell pepper finely diced

  1. Note: Edible grnd sumakh is available from Mid-Eastern or possibly Russian markets or possibly spice shops.
  2. Blanch and refresh string beans in salted water.
  3. In 1 Tbsp. extra virgin olive oil taken from the 1/2 c., caramelize the chopped shallot.
  4. Put shallot, mustard, vinegar, and vodka in a blender. Slowly drizzle in the remaining oil. Fold in sumakh, salt, and pepper. Serve over string beans (or possibly asparagus).
  5. Optional: Garnish with a little minced hard boiled egg and/or possibly finely diced red bell pepper.
  6. This recipe yields 4 servings.
