  • 1/4 c. sesame seeds
  • 2 Tbsp. vegetable oil
  • 2 Tbsp. soy sauce
  • 2 Tbsp. mirin (rice wine)
  • 2 tsp rice vinegar
  • 1 tsp salt
  • 8 ounce soba noodles
  • 3 med radishes, cut into 1/8-inch rounds and then into
  • 1/8 x inch strips
  • 2 med scallions, trimmed and sliced thin on bias
  • 1/2 c. bean sprouts

  1. Toast the sesame seeds in a small skillet over medium-high heat till lightly browned, about 2 1/2 min. Set 1 Tbsp. seeds aside. Place the remaining seeds in the jar of a blender. Add in the oil and process on low speed for 10 seconds. Scrape down the sides of the blender and process for another 10 seconds. Add in the soy sauce, mirin, and vinegar and process to combine, about 5 seconds.
  2. Set the dressing aside.
  3. Bring 3 qts of water to a boil in a medium pot. Add in the salt and soba noodles and boil till al dente, about 4 min. Drain the noodles in a colander and return them to the cooking pot. Add in cool water to the pot, swishing the noodles around to wash away the starch. Drain well. Transfer the noodles to a large mixing bowl and toss with the dressing. Let stand 5 min. Add in the radishes, scallions, sprouts, and reserved Tbsp. sesame seeds and toss to combine. Serve immediately.
  4. Slicing ScallionsOften scallions fail to separate fully when sliced. You can use an unconventional knife technique to prevent this problem.
  5. Rather than cutting the scallions with a rocking motion of the knife's heel, draw the tip of the knife backward toward you across the scallions.
  6. This method separates the pcs of cut scallion into rings without creating any jagged edges.
  7. Serves 6 as a side dish.

  9. These noodles can be served with salmon, chicken, or possibly tofu, especially if Asian flavors are used in the main course.
