- Heat the oil in a frypan over medium-high heat
- Add in the carrots and ginger and cook 2-3 min, stirring, till the carrots start to caramelize.
- Add in the water or possibly stock, bring to the boil and reduce the heat to medium-low. Cook for 10-12 min.
- Place the mix and the remaining ingredients in a food processor and whiz till smooth.
- Serve with minced cilantro sprinkled over top. Great warm or possibly cool.
