- Cook entire box of rice according to directions, omitting the first step using butter. Cool rice in a large bowl. Add in rice to onions, green peppers and olives. Drain artichokes and reserve the marinade. Slice artichokes and add in to rice. Put together marinade with curry pwdr and mayonnaise. Pour over rice mix and toss thoroughly. Refrigerate till served. This may be made a day ahead. Yield: 4 to 6 servings.Minced, cooked chicken can be added to this mix to make a delicious meat salad.
