Hi friends! I hope each of you had a great Thanksgiving. Husband and I are slated to celebrate with friends on Saturday, so our only taste of turkey came via a supermarket sample, which surprisingly was accompanied by gravy. Mmm! What did we eat on Thanksgiving? Well, lunch wound up being a quick bean soup I threw together from some black beans that’d been pressure cooked the before. Dinner, a little more exquisite, was a big skillet full of rice with oysters and all the veggies in the fridge, accompanied by refried beans.

So, if we were having coffee I’d pass you a pretty Christmas mug of dark roast and tell you that…

Last Saturday was set to be our local mall’s opening date. Husband, the baby, and I walked over on the sunny morning, hoping to snag a latte from the second ever Starbucks in the country, which just so happens to be 3 blocks away. (Insert fist pump here!) Needless to say, we walked, we saw, we walked back. No java, as it was still under construction, but I did score a free Gerber daisy that the mall supermarket was passing out.

Apparently mall grand openings here in Costa Rica are a big deal. They had a fireworks display on opening night, when they lighted the Christmas tree. The morning when we visited, we saw these dancers giving it their all for a crowd gathered right inside the mall entrance.

Summer Elizabeth warmed up just dandy to her new secondhand Ergo Organic baby carrier. She weighs around 23 lbs. now, and was really stretching out the Sleepywrap that we’d used since her birth. I’m happy to say that the whole family really likes the security and comfort of the Ergo, but I’ll save my Ergo reviews for another post. Did I mention the baby also finds destashing any bag/box/cabinet/shelf the bees knees? Look what she’s pulling out here on our walk home. Yep, my friends, that’s a diaper cover. *Blush*

I made dinner last night with earbuds inserted deep, blasting old school Newsboys tunes. One certain baby decided it was not time for night-night and whined for 30 minutes. My sanity solution was singing worship tunes and asking Husband to deal with baby if the crying became exasperated. It didn’t, but I really enjoyed the refreshing time with God.

Last night I had a cooking epiphany. We’ve lived one week in our new home, and I was getting frustrated being the lone chef every day. Imagine the light bulb moment when I realized what a quick fix this problem had. You see, we have one knife and one cutting board in the house. Of course, I was bound to be peeling, chopping, and prepping meals alone. You can bet that before this week ends, there will be a quick trip to the store for another cutting board and knife. .

Last but not least, I’d share with you that I’ve made my share of pies for the rest of the month. Our school held a Thanksgiving assembly on Wednesday that ended with a pie social. Eight families ordered pie baked by yours truly. Besides mine, there were gobs of delicious options, including kiwi pie, a new one for me. I sampled varieties of lemon, pumpkin, kiwi, and chocolate pies, but in my defense (as if I need one, right?) the slices were 3 bite-sized.

Have a fantastic weekend, friends. I’m really so happy just to have you here reading today. I’d have never imagined that anyone short of my husband would really read my blog, but here we are nearly 3 1/2 years later and you sweet people come back over and over again, and make me feel loved.
