%3C/p%3E%3Cp%3EWhile%20going%20through%20the%20recipe%20of%20this%20cake%20I%20read%20it%20almost%20twice%20to%20make%20sure%20I%20wasn't%20missing%20out%20the%20Coffee%20among%20the%20ingredients,%20but%20no,%20it%20definitely%20has%20no%20coffee.%20Well%20apparently%20coffee%20cakes%20are%20cakes%20that%20are%20intended%20to%20be%20eaten%20while%20having%20coffee%20and%20they%20usually%20have%20a%20cumbly%20or%20streusel%20based%20topping.%3C/p%3E%3Cp%3E(Source:%20Wikipedia)%3C/p%3E%3Cp%3EThis%20cake%20was%20a%20result%20of%20a%20boooooring%20Sunday!!%20I%20had%20nothing%20to%20do,%20had%20no%20plans%20of%20going%20out%20anywhere%20and%20was%20feeling%20lazy%20to%20the%20core.%20And%20around%209pm%20that%20night%20I%20was%20simply%20frustrated%20of%20my%20laziness%20and%20was%20digging%20into%20my%20fridge%20to%20check%20for%20that%20last%20piece%20of%20chocolate%20when%20I%20thought%20why%20not%20bake%20a%20cake!!%20:-)%3C/p%3E%3Cp%3EI%20immediately%20checked%20my%20pantry%20and%20fridge%20for%20basic%20cake%20ingredients%20and%20that%20was%20there.%20All%20I%20needed%20was%20a%20simple%20recipe.%20I%20checked%20my%20favorite%20baking%20website%20www.joyofbaking.com%20for%20any%20easy%20cake%20recipe%20and%20that's%20when%20I%20found%20this%20Coffee%20Cake%20and%20luckily%20I%20had%20all%20the%20ingredients%20mentioned%20including%20Sour%20cream.%3C/p%3E%3Cp%3EI%20must%20admit%20its%20the%20first%20time%20I%20used%20Sour%20cream%20in%20my%20cake%20and%20it%20came%20out%20really%20well.%20The%20cake%20tasted%20like%20a%20delicious%20butter%20pound%20cake.%3C/p%3E%3Cp%3EFor%20the%20streusel%20topping%20you%20can%20use%20dried%20fruits,%20nuts%20or%20chocolate%20chips%20,%20I%20used%20all%203%20%20:-)%3C/p%3E%3Cp%3EThe%20cake%20was%20soft%20yet%20dense%20and%20the%20streusel%20topping%20was%20sweet%20and%20crunchy%20and%20compensates%20the%20need%20or%20want%20to%20have%20any%20frosting.%3C/p%3E%3Cp%3ECoffee%20Cake%20Recipe%3C/p%3E%3Cp%3ERecipe%20source:%20JoyofBaking%3C/p%3E%3Cp%3EYou'll%20need%3C/p%3E%3Cp%3EFor%20cake:%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3E1.%20Pre-heat%20oven%20to%20350*F%3C/p%3E%3Cp%3E2.%20Grease%20a%209%20inch%20cake%20pan%20with%20butter%20and%20keep%20aside%20(%20I%20used%20a%20Round%20cake%20pan)%3C/p%3E%3Cp%3E3.%20Roast%20the%20walnuts%20in%20oven%20for%208-10%20minutes.%3C/p%3E%3Cp%3E4.%20In%20a%20bowl%20mix%20together%20all%20the%20streusel%20topping%20ingredients%20(Walnuts,%20Chocolate%20chips,%20Brownsugar,%20Cinnamon%20powder,%20All%20purpose%20flour)%20and%20keep%20aside.%3C/p%3E%3Cp%3E5.%20Sift%20together%20the%20dry%20ingredients%20(All%20purpose%20flour,%20baking%20powder,%20baking%20soda%20and%20salt).%3C/p%3E%3Cp%3E6.%20In%20a%20separate%20bowl%20using%20an%20electric%20mixer%20beat%20the%20butter%20until%20smooth%20for%202mins.%3C/p%3E%3Cp%3E7.%20Add%20the%20sugar%20and%20continue%20to%20beat%20for%204-5%20minutes%20until%20very%20smooth.%3C/p%3E%3Cp%3E8.%20Add%20the%20eggs%20one%20at%20a%20time%20and%20continue%20beating%20the%20mixture.%3C/p%3E%3Cp%3E9.%20Finally%20add%20the%20vanilla%20extract.%3C/p%3E%3Cp%3E10.%20Start%20adding%20the%20dry%20ingredients%20little%20at%20a%20time%20and%20add%20sour%20cream%20in%20between%20and%20finish%20off%20with%20dry%20ingredients%20and%20beat%20on%20low%20until%20all%20the%20ingredients%20are%20well%20incorporated.%3C/p%3E%3Cp%3E11.%20Now%20add%20half%20the%20cake%20batter%20into%20the%20cake%20pan%20smoothing%20it%20out%20evenly,%20sprinkle%20half%20the%20streusel%20topping%20mix%20on%20the%20top.%3C/p%3E%3Cp%3E12.%20Add%20the%20remaining%20cake%20batter%20and%20again%20after%20evenly%20smoothing%20it%20out%20add%20the%20remaining%20streusel%20topping%20all%20over%20the%20top.%3C/p%3E%3Cp%3E13.%20Bake%20for%20about%2040-50%20mins%20until%20a%20toothpick%20inserted%20into%20the%20cake%20comes%20out%20clean.%20(Mine%20was%20done%20in%2045%20mins)%3C/p%3E%3Cp%3E14.%20Let%20the%20cake%20cool%20for%20sometime%20and%20then%20remove%20the%20cake%20from%20the%20pan.%3C/p%3E%3Cp%3ESuggestion:%20If%20using%20raisins%20in%20the%20streusel%20topping%20add%20it%20in%20the%20initial%20layering%20in%20the%20middle%20of%20the%20cake%20as%20the%20raisins%20when%20placed%20on%20top%20may%20burn%20during%20baking.%3C/p%3E%3Cp%3EAll%20in%20all%20it%20was%20a%20really%20good%20cake%20.%20Manish%20is%20usually%20not%20much%20of%20a%20'cake'%20person,%20though%20he%20doesn't%20mind%20it%20once%20in%20a%20while,%20but%20for%20this%20cake%20we%20were%20literally%20fighting%20for%20the%20last%20crumb!%3C/p%3E%3Cp%3EAlso%20adding%20some%20of%20the%20streusel%20mixture%20in%20between%20the%20cake%20gives%20a%20nice%20bite%20now%20and%20then.%3C/p%3E%3Cp%3EI%20definitely%20had%20it%20more%20times%20than%20I%20had%20my%20coffee%20;-)%3C/p%3E%3Cp%3EEnjoy%20your%20cake%20!!%3C/p%3E%3Cp%3EI'm%20sending%20this%20post%20to%20Bake%20Fest%20%231%20Event%20hosted%20by%20Vardhini%20of%20Zesty%20Palette.%3C/p%3E%3Cp%3E-Manju%3C/p%3E){kind=link}
