Coconut Shrimp
I saw this easy recipe for Coconut Shrimp in a Taste of Home Cookbook and I thought I would give it a try! I changed it slightly~ Adding old bay seasoning, using Malibu rum, instead of plain rum, adding sweet and sour sauce and dried chili peppers to the sauce. I really enjoyed this recipe! The sauce was really good also, wonderful with egg rolls!
- 1 egg
- 1 T water
- 1 cup panko (Japanese) bread crumbs
- 1 cup flaked coconut
- 1/2 t old bay seasoning
- 1 pound uncooked large shrimp, peeled and deveined
- oil-for deep frying
- 1 jar (12 oz) orange marmalade (Smuckers Sweet Orange Marmalade)
- 1/4 cup Malibu rum
- 1/4 Sweet and Sour sauce ( from a 11 oz bottle, I used Kikkoman)
- 3 dried hot chili peppers
1. In shallow bowl, whisk egg and water. In another shallow bowl, combine bread crumbs, coconut and old bay seasoning. Dip shrimp into egg mixture, then roll in crumb mixture.
2. In an electric skillet or deep fat fryer, heat 1/4 inch of oil to 375º. Fry shrimp, a few at a time, for 1-2 minutes on each side or until golden brown. Drain on paper towels.
3. Meanwhile, in a small saucepan, bring orange marmalade, rum, sweet and sour sauce and chili peppers to a boil. Reduce heat; simmer, uncovered for 5 minutes. Serve with Shrimp.
