  • 6 tablespoon butter
  • 1 1/2 cups brown sugar
  • 2 teaspoons vanilla
  • 1 large egg
  • 1 1/4 cups flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 3/4 cups toasted shredded coconut, divided
  • including 1/4 cup reserved for the topping
  • 1 1/4 cups chopped caramel into 1/4 pieces
  • 1 tablespoon heavy cream
  • 3/4 cup chopped bittersweet or semisweet chocolate or
  • chocolate chips

  1. In a large bowl, beat together the butter, brown sugar, vanilla, and
  2. egg
  3. Mix in the flour, salt, baking powder, and 1 1/2 cups of the coconut
  4. Spread the mixture in an ungreased 13 x 9 inch baking pan
  5. Bake in a preheated 350 F oven for 15 minutes
  6. While the crust is baking, melt the caramel with the cream in the microwave, or in a saucepan set over a burner on the stove.
  7. Stir to combine
  8. Drizzle the caramel over the crust
  9. Return it to the oven for 10 to 12 minutes or until the crust is medium brown
  10. Remove the pan from the oven
  11. Sprinkle the chopped chocolate over the crust.
  12. Allow the chocolate to soften for about 5 minutes
  13. Spread it evenly over the crust.
  14. Sprinkle the reserved 1/4 cup of coconut over the top.
  15. Cool for 30 minutes, then while still slightly warm, loosen the edges and cut into bars.
  16. Cool completely before serving
