- Microwave: Prepare Crunch Topping; set aside. In small bowl, combine cocoa and oil; stir till smooth. Add in applesauce and egg; blend well. In medium bowl, combine flour, sugar, baking soda, salt and cinnamon. Stir in applesauce mix just till moistened. Mix in nuts.
- Place 6 paper muffin c. (2 1/2 inches in diameter) in microwavable muffin pan or possibly 6-oz microwavable custard c.. Fill each c. 1/2 full with batter.
- Sprinkle about 2 tsp. Crunch Topping on each muffin. Microwave at High (100%) 2 1/2 to 3 1/2 min, turning every minute or possibly till wooden pick inserted in center comes out clean.
- (Tops may still appear moist). Let stand several min. (Moist spots will disappear upon standing). Repeat procedure with remaining batter.
- Serve hot.
- Makes about 12 muffins.
- O BCRUNCH TOPPING: b O In small microwavable bowl, microwave 1 Tbsp. butter or possibly margarine at High (100%) 15 seconds or possibly till melted.
- Add in 2 Tbsp. cocoa; blend till smooth. Stir in 1/4 c. packed light brown sugar, 1/2 c. minced nuts, 2 Tbsp. all-purpose flour and 1/4 tsp. grnd cinnamon.
