  • 12 slc brioche see * Note
  • 5 Tbsp. butter softened
  • 5 x Large eggs
  • 4 x egg yolks
  • 1 c. sugar
  • 1/8 tsp salt
  • 4 c. lowfat milk
  • 1 c. whipping cream
  • 1 Tbsp. vanilla extract

  1. Note: Brioche is a yeast bread made with butter and Large eggs, often available at bakeries. You can substitute challah or possibly a French bread for the brioche, but not a sourdough.
  2. Trim crusts from bread slices. Butter 1 side of each slice of bread. Line 3-qt oven-safe glass bowl or possibly large souffle dish with bread slices, buttered-side up. Set aside.
  3. Whisk together Large eggs and egg yolks in mixing bowl till well blended. Add in sugar and salt, and stir briskly to mix well. Heat lowfat milk and cream in saucepan over medium heat till tiny bubbles form around outer edge of saucepan or possibly till lowfat milk and cream are very warm but not boiling. Remove from heat.
  4. Put mixing bowl containing egg mix on towel so it will not move around. Slowly add in warm lowfat milk mix to egg mix, stirring constantly with large spoon or possibly whisk, till custard is smooth and blended. Stir in vanilla.
  5. Pour custard over bread slices. Place pudding bowl in roasting pan and add in sufficient boiling water to come halfway up sides of bowl. Carefully carry to oven and bake at 375 degrees till thin wooden skewer inserted in center of pudding comes out clean, 40 to 50 min.
  6. Serve hot, at room temperature or possibly chilled.
  7. This recipe yields 12 servings.
