There is something about a good tuna fish sandwich that always reminds me of my school days. Sitting in the cafeteria, the smell of the cafeteria cleaners wafting off the tables, the hum of all those kids piling in with eager expectations of finding their favorite meal in the lunch line. Those were the days. This post created and shared in collaboration with eBay. But beg as I might, mom always packed my lunches instead of giving me lunch money for the cafeteria food. I didn’t know it at the time, but I should have been far more grateful when I look back now and realize the type of food they were actually serving us. It wasn’t pretty. But as a young kid, you just don’t know any different. However, one of the lunches that I never complained about was a tuna fish sandwich. I loved them. The smell, the flavor, the crunch of the onion and that perfect amount of “full” I felt when I was done eating it. A good tuna fish sandwich is a thing of beauty and I always appreciated mine. So now that Mini Chef is headed back to school later this month, I’ll be making a few of these for his lunch now and again. I’m not sure he will get the same, nostalgic memories from them, but at the very least, I know he’ll be eating good food.
