Clean Eating Corn Bread – Clean & Delicious®

I did not grow up eating cornbread.

The first time I ever tried it was probably two years ago and that was because I bought the box mix at Trader Joe’s after trying a sample in the store (definitely not clean but certainly delicious). I am such a sucker for the sample, I will buy just about anything I sample, provided I like it of course.

Anyway, recently I received a request to make cornbread stuffing (recipe coming soon!) and I just knew if I were going to make a clean stuffing I would first have to make a clean cornbread. So off to work I went.

It took me about 5 or 6 tries to finally come up with a clean cornbread that I really loved. Because with cornbread it’s not just taste but texture too, am I right?

My daughter is kind of obsessed with the cornbread from Whole Foods so I did my best to replicate it with a Clean & Delicious touch;).

This recipe has a nice sweetness to it without being too sweet and it has a rich, cake-y texture with a bit of cornmeal ‘grit’ in the mix (that may not be the best way to describe but I promise it’s a good thing). Plus little pops of corn for good measure because I just adore fresh corn in my cornbread.

Clean Eating Corn Bread

Yield: Makes 12 servings

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

Directions:

Pre-heat oven to 350 degrees.

In a large bowl combine cornmeal, whole-wheat pastry flour, baking powder and salt. Gently stir everything together.

In a smaller bow combine buttermilk, honey, egg, and coconut oil. Whisk everything together until it is well combined.

Add the wet ingredients into the dry ingredients along with the corn kernels and gently stir until the ingredients are just incorporated.

Pour everything into a greased pan 9x5 and cook for 25-30 minutes or cooked through.

Makes 12 servings.
