So as many of you know, I’ve been losing weight by eating clean AND low carb. But one aspect of my weight loss that I have not talked about is fat intake.
Following my doctor’s instructions, I have lowered my carbs AND significantly increased my healthy fat intake. It’s basically a clean eating ketogenic diet.
I can tell you, it has not been an easy adjustment. Particularly without dairy, which I just do not digest well. It seems that low carb eating is fraught with dairy at every turn making resources scarce for me.
So I’ve taken a cue from the Paleo world and started implementing more coconut. In this case, coconut milk.
Now if increasing your fat intake is not at the forefront of your health goals, you can use light coconut milk instead. That will dramatically reduce the fat content.
And for anybody worried about the future of my recipes, have no fear. I still have to cook clean, delicious meals for Mini Chef. I promise not to leave you hanging if low carb / high fat isn’t your thing. Just know that some of my recipes will reflect my eating style and some will reflect Mini Chef’s. I think it’s a good balance. At least I hope it is!
This recipe came about out of a desperate need for a creamy, soothing drink on a foggy evening. Sometimes, you just need a comforting treat, and this fit the bill perfectly.

Clean Eating Coconut Pumpkin Spice Steamer
Ingredients:
- 1/2 cup full-fat coconut milk
- 1/4 tsp. pumpkin pie spice
- 1 tsp. vanilla extract
- Sweetener of choice to taste (I used stevia – my only choice for sweeteners these days – but honey or maple syrup would work well here)
Directions:
In a small pot, combine all ingredients.
Over low to medium heat, warm the milk while whisking.
When the milk has small bubbles (when it simmers), it’s done.
Serve in a nice little mug and enjoy!
