- 2 large egg yolks
- 1/3 cup sugar
- 1/3 cup cocoa
- 1 cup heavy cream
- 1 cup whole milk
- 1 Tbsp Pomegranate liqueur (optional)
- Whipping cream
- Pomegranate arils (optional)

%3C/p%3E%3Cp%3EThis%20takes%20me%20way%20back;%20almost%20further%20than%20I%20can%20remember.%20But%20luckily%20I%20do%20remember.%20Me%20the%20girl%20with%205%20years%20of%20French%20and%20a%20love%20of%20cooking%20and%20I%20wanted%20to%20combine%20the%20two.%20He%20the%20boy%20I%20wanted%20to%20impress%20with%20something%20au%20Francais.%20I%20wasn%E2%80%99t%20an%20experienced%20cook%20and%20he%20certainly%20wasn%E2%80%99t%20a%20demanding%20admirer%20but%20I%20wanted%20it%20perfect%20and%20someone%20with%20more%20experience%20than%20myself%20suggested%20I%20try%20making%20Pots%20de%20Creme.%20It%20sounds%20silly%20until%20you%20pronounce%20it%20correctly%20(poh%20de%20creme)%20and%20it%20seems%20like%20chocolate%20pudding%20until%20you%20take%20that%20first%20bite.%20That%20first%20luxurious,%20silky,%20smooth,%20rich%20bite.%20The%20taste%20is%20certainly%20part%20of%20it%20but%20there%20was%20more.%20It%20was%20French.%20It%20was%20chocolate.%20It%20was%20quite%20simply%20love.%3C/p%3E%3Cp%3EThis%20classic%20dish%20is%20deservedly%20so.%20My%20ONLY%20caveat%20over%20the%20years%20has%20been%20to%20mix%20up%20the%20liqueur%20I%20add%20to%20the%20recipe.%20Quite%20often%20just%20orange%20liqueur%20makes%20an%20appearance%20but%20I%20like%20change.%20I%E2%80%99ve%20done%20brandy%20and%20bourbon%20and%20rum.%20Kahlua,%20mint%20and%20raspberry%20liqueur%20have%20had%20their%20moments%20in%20the%20sun%20too%20but%20this%20time%20I%20wanted%20to%20use%20the%20last%20of%20the%20ruby%20red%20pomegranate%20arils%20in%20the%20fridge%20so%20I%20dug%20into%20my%20liquor%20stash%20and%20found%20what%20I%20hoped%20I%20had.%20Yes,%20some%20Pomegranate%20Liqueur!%20I%20love%20the%20idea%20of%20something%20just%20a%20bit%20tart;%20it%20is%20a%20nice%20compliment%20to%20the%20silkiness%20of%20the%20chocolate;%20just%20perfect%20if%20you%20ask%20me!%3C/p%3E%3Cp%3EI%20was%20the%20lucky%20recipient%20of%20a%20box%20filled%20with%20Ghirardelli%20Chocolates;%20what%20a%20delightful%20surprise%20that%20was.%20Ghirardelli%20has%20made%20the%20cutest%20seasonal%20treats%20this%20year%20and%20I%20thought%20they%20would%20be%20perfect%20to%20adorn%20this%20perfect%20Valentine%20dessert%20that%20I%20wanted%20to%20take%20to%20neighbors.%20The%20parents%20would%20get%20the%20Pots%20de%20Creme%20but%20the%20kids%20would%20not%20be%20left%20out.%20Adorned%20with%20tokens%20of%20love,%20each%20candy%20professes%20a%20time%20honored%20Valentine%20%20message%20including%20Love,%20Sweet,%20XOXO%20and%20Be%20Mine.%20Everyone%20wins!%3C/p%3E%3Cp%3EI%20love%20this%20recipe;%20it%E2%80%99s%20the%20same%20one%20I%20made%20all%20those%20many%20years%20ago%20(and%20yes,%20it%20seems%20it%20did%20win%20someone%E2%80%99s%20heart%E2%80%A6until%20I%20was%20ready%20to%20move%20on!).%20Many%20recipes%20for%20pots%20de%20creme%20call%20for%20a%20water%20bath%20in%20the%20oven%20to%20finish%20them;%20this%20does%20not%20and%20that%20easier%20preparation%20in%20no%20way%20diminishes%20the%20final%20result.%20It%20is%20tres%20Delicieux!%3C/p%3E%3Cp%3EThe%20Ghirardelli%20chocolates%20were%20a%20big%20hit;%20I%E2%80%99m%20just%20delighted%20I%20had%20them%20to%20use%20for%20this%20preparation.%20Look%20for%20them%20at%20your%20local%20grocer%20and%20if%20you%20miss%20Valentines%20Day?%20No%20worries%E2%80%A6they%20have%20equally%20adorable%20ones%20for%20Easter%20with%20chicks,%20bunnies%20and%20baskets.%20I%20see%20some%20in%20my%20daughters%20futures%E2%80%A6candy%20from%20mom%20yes,%20but%20no%20longer%20just%20any%20candy%E2%80%A6something%20delicious!%3C/p%3E%3Cp%3EClassic%20French%20Pots%20de%20Creme%20with%20Rubies%20(Pomegranate)%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EPreparation%3C/p%3E%3Cp%3EMelt%20the%20dark%20chocolate%20in%20a%20double%20boiler%20or%20fabricate%20our%20own%20with%20a%20large%20pot%20with%20simmering%20water%20and%20a%20large%20stainless%20bowl%20held%20over%20it.%3C/p%3E%3Cp%3EWhisk%20together%20the%20egg%20yolks,%20sugar%20and%20cocoa.%3C/p%3E%3Cp%3EHeat%20the%20cream%20and%20milk%20together%20until%20it%20is%20almost%20boiling%20(scalding).%20Remove%20from%20heat%20and%20whisk%20the%20cream/milk%20mixture%20very%20slowly%20into%20the%20eggs%20mixture;%20whisking%20continuously%20to%20insure%20the%20eggs%20don't%20scramble;%20continue%20until%20all%20of%20the%20milk%20mixture%20in%20incorporated%20with%20the%20egg%20mixture.%3C/p%3E%3Cp%3EPour%20the%20mixture%20back%20into%20the%20large%20saucepan%20and%20bring%20to%20a%20simmer.%20Stir%20constantly%20with%20a%20wooden%20spoon%20for%20about%205%20minutes%20or%20until%20the%20mixture%20coats%20the%20back%20of%20the%20spoon.%3C/p%3E%3Cp%3EOnce%20it%20does,%20slowly%20whisk%20the%20custard%20mixture%20into%20the%20melted%20chocolate.%20Add%20the%20liqueur%20and%20whisk%20until%20incorporated,.%3C/p%3E%3Cp%3EPour%20into%204%20individual%20serving%20containers%20(I%20just%20used%20cocktail%20glasses).%3C/p%3E%3Cp%3ECover%20the%20tops%20immediately%20with%20plastic%20wrap%20to%20pre
