- In a heavy-bottomed saucepan heat sugar and water, stirring till dissolved. Bring to a boil without stirring and simmer till sugar caramelizes - it will be thick and amber-colored. Remove pan from heat and CAREFULLY add in citrus juices - it will bubble furiously. Return to heat and continue simmering till thick, syrupy and concentrated.
