Cinnamon Roll Cupcakes with Cinnamon Cream Cheese Frosting ~ All of the delicious flavor of a homemade cinnamon roll, but without all the waiting!

Holey moley you guys. I have not posted one single project this entire month! I literally have four incomplete projects on my desk, and at least a dozen others all around the house. It is getting ridiculous! Don’t you hate that stage when you have something 90% done, but you just can’t find the time/money/supplies to get it finished? It’s driving me crazy!

So, since I can’t manage to get anything done, I am relying on recipes from the deep depths of my computer so I’ll at least have something to post. I found this gem that I actually made last fall. These Cinnamon Roll Cupcakes are amazing!! The cupcake is nice and tender, and it is full of cinnamony goodness. I took these to a teacher appreciation dinner at the jr. high, and I was told that they were the first to go!

This cinnamon cream cheese frosting is the bees knees! It is rich and creamy and has a hint of spice. I could totally eat it by the spoonful. It is delicious, trust me!

And of course you can’t have cinnamon roll anything without an awesome cinnamon sugar filling! It is so fun to bite into these cupcakes and get that burst of sweet cinnamon flavor. And it looks pretty too!

Don’t you just wish you had one in front of you right now? I know I do.

Cinnamon Roll Cupcakes

Filling:

Beat cream cheese and butter till creamy. Add vanilla, cinnamon, and 5 cups powdered sugar. Beat till smooth. Add more powdered sugar if needed. (This makes a thick frosting for piping on the cupcakes. If you want to just spread it, you can use less powdered sugar or add a little milk.)
