  • 1/2 c. raisins
  • 1 c. whole lowfat milk
  • 2 1/4 c. unsifted flour
  • 1 1/4 c. sugar
  • 1 1/2 tsp baking pwdr
  • 1 1/4 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 2/3 c. (11 Tbsp.) unsalted butter at room temperature
  • 2 x Large eggs
  • 1 x egg yolk
  • 1 Tbsp. finely grated orange zest

  1. Have all ingredients at room temperature. Place the raisins and 1/4 c. of the lowfat milk in a small bowl; let soak for 15 min.
  2. Adjust rack in lower third of oven; preheat oven to 350 degrees. Grease and flour an 8 inch square cake pan; set aside.
  3. Sift the flour, sugar, baking pwdr, cinnamon, nutmeg, baking soda and salt into a large bowl. Add in the butter, the remaining 3/4 c. lowfat milk and the raisins and any remaining soaking lowfat milk. Using an electric mixer on low speed, stir for 1 minute, till well blended. Add in the Large eggs and egg yolk and beat for 1 minute, till the mix is creamy smooth. Stir in the orange zest. Spoon the batter into the pan, spreading it proportionately.
  4. Bake for about 35 min, till the cake springs back when lightly touched in the center and it's just beginning to pull away from the sides of the pan.
  5. Place the pan on a wire rack and let cold to room temperature before serving.
  6. Serves 8 to 12, depending on how the cake is cut.
