  • 3/4 c. sugar
  • 3/4 c. warm mashed potatoes
  • 1 1/2 c. very hot water
  • 2 Tbsp. yeast
  • 1/2 c. butter, softened
  • 2 x Large eggs
  • 2 tsp salt
  • 2 c. white flour
  • 4 1/2 c. whole wheat flour filling:
  • 1 1/3 c. packed brown sugar
  • 1/2 tsp grnd cinnamon
  • 3 Tbsp. cream
  • 2 Tbsp. butter, softened Powdered sugar icing, optional

  1. In a large mixing bowl, combine sugar, potatoes, and water; mix well. Add in yeast; mix well. Allow to sit for a few min till yeast is dissolved and frothy. Add in 2 c. white flour and beat by hand for a few min to develop the gluten. Cover and let rise in a hot place for 1 hour. Stir dough down; fold in butter, Large eggs and salt. Gradually stir in the whole wheat flour. Cover and let rise in a hot place for 1 hour. Meanwhile, combine filling ingredients and set aside. Turn dough out onto a lightly floured surface; knead till smooth and elastic, about 6 - 8 min.
  2. Divide dough in half. On a floured surface, roll each portion into a 12" by 12"square. Divide filling and spread over each square to within 1 inch of the edges. Roll up jelly-roll style. Cut each roll into nine slices. Place in a greased 9" x 9" baking pan. Cover and let rise in a hot place till doubled, about 1 hour. Bake at 350 degrees F. for 35 - 40 min or possibly till golden brown. Drizzle with a powdered sugar icing if you like.
  3. Yield: 18 rolls.
