The addition of cinnamon chips gives an added boost of this fragrant scent in this Cinnamon Chip Loaf.

Cinnamon Chip Loaf

Pre heat oven to 350 degrees

In a large bowl, combine the flour, ¾ cup sugar, baking soda, dried buttermilk and salt.

In a separate bowl, combine water, eggs and butter; stir into dry ingredients just until moistened.

Add the Cinnamon chips

In a small bowl, combine cinnamon and brown sugar.

Spray the bottom only of a 9-in. x 5-in. loaf pan.

Pour half of the batter into pan; sprinkle with half of the cinnamon-sugar. Carefully spread with remaining batter and sprinkle with remaining cinnamon-sugar.

Bake at 350° for 35 to 40 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan.

Confession time. I bought a bag of mint chocolate chips with the intention of making mint brownies. I knew that I was headed down the wrong path when the batter was so thick, it was like one huge clump of chocolate deliciousness. At least the batter tasted fantastic. I added the mint chips to the top of the batter and attempted to bake the brownies.

The end result was a heavy dry 8 x 8 square with mint chips on top that didn’t even melt properly. What a disappointment.

I resorted to plan B. When I was at Walmart Market I discovered a bag of cinnamon chips. I heard about them before but never saw them at the grocery store. Now I had a reason to make something else using the cinnamon chips I bought.

After it came out of the oven, the kitchen smelling like cinnamon, I knew I had a winner. I wanted to make this to bring to the office, but that just didn’t happen. It was Sunday morning and as the troops began to emerge from sleep, the Cinnamon Chip loaf started to disappear.
