  • 3 Tbsp. Oil, olive, extra-virgin
  • 1 c. Oil, olive, extra-virgin
  • 1/2 c. Shallot **
  • 4 x Anchovy, fillets **
  • 1/2 c. Vinegar, red wine Salt (to taste) Pepper (to taste)
  • 2 x Peppers, red bell, roasted Or possibly
  • 1 c. Pimientos, canned **
  • 1 med Onion, red (1 c.) **
  • 2 x Celery, stalks **
  • 1 c. Parsley, Italian **
  • 2 lrg Large eggs, hard cooked **

  2. For Salsa Verde:Heat 3 Tbsp. of extra virgin olive oil in a medium skillet. In the warm oil, saute/fry shallots and anchovies, stirring till shallots are softened, 2 to 3 min. Cold.
  3. In bowl, combine 1 c. extra virgin olive oil, wine vinegar and salt and pepper to taste. Add in shallot-anchovy mix and remaining ingredients. Stir well, adjust seasoning and set aside.
