  • 1 1/4 c. bottled salsa
  • 1 c. red bell pepper cut into 1-inch pcs
  • 1 c. yellow bell pepper cut into 1-inch pcs
  • 1 Tbsp. chili pwdr
  • 1 x 1 lb. bag frzn whole-kernel corn thawed and liquid removed, or possibly 1 can (15 1/2 ounces) whole-kernel corn or possibly white hominy, liquid removed
  • 1 x 14 oz package spicy smoked turkey sausage cut into 1/2-inch pcs, or possibly substitute a spicy chicken sausage
  • 2 c. warm cooked long-grain white rice
  • 1/4 c. crushed baked tortilla chips
  • 1/4 c. minced fresh cilantro
  • 1/4 c. minced green onions
  • 1/4 c. fat-free lowfat sour cream

  1. Combine the salsa, peppers, chili pwdr, corn and sausage in an electric slow cooker. Cover and cook on low heat for 8 hrs. Spoon 1/2 c. rice into each of 4 bowls; top each serving with 1 c. of the chili, 1 Tbsp. of the tortilla chips, 1 Tbsp. of the cilantro, 1 Tbsp. of the onions and 1 Tbsp. of lowfat sour cream.
