- 1/4 cup natural cocoa powder, sifted (I used Ghiradelli)
- 1 cup, whisked, spooned, leveled white whole wheat flour
- 1 cup, whisked, spooned, leveled spelt flour
- 1 T baking powder
- 1/2 fine sea salt
- 1 t coarse sea salt
- 3 cups packed light brown sugar
- 1 1/2 cups (3 sticks) unsalted butter, softened
- 1 T vanilla
- 4 eggs
- 1 cup cacao nibs
- 1 cup baking M&Ms
- 1 1/2 cups bittersweet chocolate chips
- 1 1/2 cups white chocolate baking discs (or chipsâbut be sure to use true white chocolate)

%20not%20worth%20blogging%20about.%20%20So%20next%20it%20was%20Sammy%E2%80%99s%20turn%20to%20choose,%20and%20she%20returned,%20of%20course,%20to%20the%20Sesame%20Street%20Yummy%20Cookies%20book.%20%20I%20made%20some%20changes,%20and%20this%20is%20an%20awesome%20chocolate%20cookie.%20%20Further,%20it%20freezes%20really%20well,%20so%20do%20as%20I%20did%20and%20double%20the%20recipe,%20only%20baking%20some%20of%20them.%3C/p%3E%3Cp%3EThe%20more%20Sammy%20and%20I%20bake,%20the%20more%20I%20have%20been%20trying%20to%20relax%20and%20let%20her%20do%20things%20that%20aggravate%20the%20control%20freak%20inside%20of%20me.%20%20She%20has%20started%20scraping%20down%20the%20sides%20of%20the%20bowl%E2%80%93a%20task%20which%20is%20not%20so%20scary,%20just%20time%20consuming%20(no%20I%20am%20not%20naturally%20patient%20either).%20%20I%20usually%20re-scrape%20after%20her,%20to%20make%20sure%20she%20did%20not%20miss%20anything.%3C/p%3E%3Cp%3EI%20have%20also%20(gasp!)%20started%20letting%20her%20dump%20the%20flour%20into%20the%20mixing%20bowl.%20%20This%20is%20much%20scarier,%20and%20it%20is%20all%20I%20can%20do%20to%20not%20surreptitiously%20help.%20%20I%20am%20proud%20to%20say%20I%20did%20let%20her%20do%20it%20(ok%20the%20second%20half%20of%20it,%20when%20the%20bowl%20was%20not%20as%20full)%20and%20even%20prouder%20to%20say%20she%20did%20not%20spill%20any.%20%20PHEW!%3C/p%3E%3Cp%3ESammy%20and%20I%20decided%20to%20get%20really%20chocolate%20crazy%20with%20our%20mix-ins%20for%20this%20cookie.%20%20We%20used%20baking%20M&Ms,%20Guittard%20bittersweet%20chips,%20Guittard%20white%20chocolate%20discs,%20and%20Scharffenberger%20cacao%20nibs.%20%20I%20am%20in%20love%20with%20that%20combination%20(most%20of%20which%20was%20insisted%20on%20by%20Sammy%E2%80%93the%20girl%20has%20good%20instincts!)%20but%20I%20am%20sure%20you%20could%20sub%20in%20whatever%20you%20liked%E2%80%93nuts,%20dried%20fruit,%20other%20chocolate%20chips%20or%20chopped%20chocolate.%20%20And%20I%20subbed%20in%20some%20cocoa%20powder%20for%20some%20of%20the%20white%20flour.%20%20The%20recipe%20below%20is%20reflects%20how%20I%20made%20the%20cookies,%20including%20the%20doubling%E2%80%93just%20cut%20it%20in%20half%20if%20you%20want%20less,%20but%20I%20encourage%20you%20again%20to%20make%20it%20as%20is,%20scoop%20out%20balls%20of%20dough%20and%20freeze%20them%20for%20later,%20spontaneous%20baking.%20%20You%20won%E2%80%99t%20be%20sorry.%20%20(I%20should%20add,%20whether%20you%20choose%20to%20freeze%20some%20or%20not,%20this%20is%20a%20dough%20that%20benefits%20from%20resting,%20so%20plan%20ahead.)%3C/p%3E%3Cp%3EChunky%20Quadruple%20Chocolate%20Cookies%3C/p%3E%3Cp%3EAdapted%20from%20Sesame%20Street:%20Yummy%20Cookies:%20Baking%20with%20Kids%3C/p%3E%3Cp%3EMelt%20the%20unsweetened%20chocolate%20in%2030%20second%20intervals%20on%2050%25%20powder%20in%20the%20microwave.%20%20When%20it%20is%20completely%20melted,%20stir%20it%20smooth%20and%20set%20it%20aside.%3C/p%3E%3Cp%3EWhisk%20together%20the%20flours,%20cocoa,%20baking%20powder,%20and%20salts.%20%20Set%20aside.%3C/p%3E%3Cp%3EBeat%20the%20butter%20in%20a%20large%20bowl%20until%20smooth%20(an%20electric%20mixer%20works%20best%20for%20this).%20%20Add%20the%20sugar%20in%202%20installments,%20beating%20until%20the%20mixture%20is%20lightened%20and%20fluffy.%20%20Scrape%20the%20sides%20down%20as%20needed.%20%20Add%20the%20eggs%20one%20at%20a%20time,%20beating%20until%20well%20blended%20after%20each%20egg.%20%20Scrape%20down%20the%20sides%20and%20bottom%20and%20add%20the%20vanilla.%20%20Beat%20in%20until%20completely%20blended.%20%20Beat%20in%20the%20melted%20chocolate.%3C/p%3E%3Cp%3EAdd%20the%20flour%20mixture%20in%203%20installments,%20mixing%20on%20low%20speed%20after%20each%20installment%20(do%20not%20worry%20about%20completely%20mixing%20in%20the%20flour%20in).%20%20Add%20the%20cacao%20nibs,%20M&Ms,%20chocolate%20chips%20and%20white%20chocolate%20disks%20in%202%20installments%E2%80%93be%20certain%20after%20the%20last%20installment%20to%20scrape%20down%20the%20sides%20and%20bottom%20and%20make%20sure%20that%20any%20stray%20flour%20is%20completely%20mixed%20in%20to%20the%20mass.%20%20Cover%20with%20wax%20paper,%20pressing%20tightly%20to%20the%20dough,%20and%20chill%20for%20at%20least%206%20hours%20and%20up%20to%203%20days.%3C/p%3E%3Cp%3E20%20minutes%20before%20baking,%20preheat%20the%20oven%20to%20350%20F%20(or%20325%20F%20convection).%20%20Scoop%20out%20approximately%201/4-cup%20sized%20rounds%20of%20dough%20and%20place%206%20to%20a%20cookie%20sheet.%20%20Bake%20for%2012%20minutes,%20or%20until%20the%20dough%20is%20set%20and%20just%20barely%20beginning%20to%20crack%20(it%20may%20take%20a%20minute%20or%202%20longer%20if%20you%20are%20starting%20with%20frozen%20dough).%20%20Cool%20for%205%20minutes%20on%20the%20cookie%20sheets%20and%20then%20transfer%20to%20a%20cooling%20rack%20to%20finish%20cooling.%3C/p%3E){kind=link}
