In looking back over the past few years of Christmas posts I've shared, it appears as though I have a liking for fun yet simple white chocolate Christmas treats.
Like the Christmas white chocolate-dipped Rice Krispie treats I shared last year. Or the very popular Christmas white chocolate-dipped pretzel rods I shared several years back. Or my favorite Christmas white chocolate-peppermint popcorn and Little Miss H.'s favorite white chocolate-peppermint potato chips.
And aside from the white chocolate, do you know what all these tasty treats have in common?
They're all super easy to make!
Which means with just a few basic ingredients and not a whole lot of time, you can whip out a batch of any of these fun simple-to-prepare Christmas treats.
Well, this year I have a new addition to the simple white chocolate treats line-up ~ super easy Christmas White Chocolate Marshmallow Pops.
These marshmallow pops come together really easily, and are a great project to do with the little ones. Our sweet 7-year-old Little Miss H. was easily able to handle making these completely on her own. The only thing I did was melt the white chocolate for her and give her a quick demo of how to do the chocolate dipping. Then she took it from there all on her own.
To make them, simply grab some 6-inch lollipop sticks. Place three marshmallows on each stick, pushing the lollipop stick almost to the top of the top marshmallow without allowing the stick to poke through.
Dip each stick of marshmallows in melted white chocolate or bark coating ...
... turning to coat all sides. Then gently tap off any excess coating, allowing it to drip back into the dipping container.
Make sure to fully coat each marshmallow. If spots are left uncoated, the marshmallows will dry out and get hard.
Immediately sprinkle on some fun and festive Christmas sprinkles while the coating is still wet. Sometimes if the coating is still really wet, the sprinkles will kind of slide around on the marshmallow pop and not stay in place where you want them. If this happens, slowly and gently turn the marshmallow pop to get the coating to set up just a bit and help the sprinkles stay in place.
Place the sprinkled pops on a baking sheet lined with wax paper to allow the coating to set.

Christmas White Chocolate Marshmallow Pops
Ingredients
about 30 large marshmallows
1 (1 lb.) package
white candy melts or 1 (24 oz.) package white bark coating
2 T.
- shortening
- assorted Christmas sprinkles
- about 10 6-inch lollipop sticks
Directions
Place three marshmallows on each lollipop stick. For the top marshmallow, push the lollipop stick almost to the top of the marshmallow without allowing the stick to poke through. Set aside.
Melt candy melts or bark coating and shortening together in the microwave per package directions (typically in 30 second intervals, stirring in between). NOTE: The shortening thins out the coating a bit and makes it easier to get a nice smooth coating on the marshmallows.
With a spoon, dab a little of the melted coating around the lollipop stick where it joins the bottom marshmallow {because it’s difficult to get the bottom of the marshmallow fully coated and sealed when dipping}. Working quickly, dip a stick of marshmallows in the candy coating, rolling as needed to coat all sides. Let excess coating drip off back into the container. Sprinkle with sprinkles, as desired. Place on waxed paper and let stand for coating to set up.
Repeat with remaining sticks of marshmallows, occasionally reheating coating if needed.
Store in an airtight container for up to two weeks.
