Have you ever been on the King Arthur Flour website? No? You haven’t? Well, if you are a “baker” then you really must go, because there are so many great items and recipes!
When I was young, my Aunt always made stollen for Christmas and my Dad LOVED it! So when I received my products from King Arthur Flour, I also received a recipe card for “Our Easiest Stollen” and I knew I had to give it a try.
It didn’t turn out how I remember it from when I was a kid–it was BETTER! So moist and fruity, if you like stollen, you must try this today...
Christmas Stollen
Ingredients:
- 2 1/3 cups King Arthur All-Purpose flour
- 1/2 cup sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup cold butter
- 1 cup candied fruit-cut into little bits
- 1/3 cup pecan pieces
- 1 cup part-skim ricotta cheese
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup powered sugar
- 2 tablespoons milk
Directions:
Preheat oven to 325 degrees. Whisk together the flour, sugar, baking powder and salt. Work the cold butter into the flour mixture to form uneven crumbs. Toss the fruit and pecans with the flour mixture.
In a separate bowl, mix together the cheese, egg, and vanilla. Combine the wet and dry ingredients. Divide the dough in half, and roll each piece into a 8" x 7" oval that's about 1/2" thick. Place on a lightly greased or parchment-lined baking sheet.
Bake for about 40 minutes or until lightly browned. For the frosting, mix the powdered sugar and milk together-to desired consistency and drizzle over the cooled stollen.
