%20but%20hopefully%20that%20will%20change%20this%20week.%20At%20least%20I%20have%204%20loaves%20of%20this%20beautiful%20bread%20to%20pass%20out%20to%20friends%20and%20family.%3C/p%3E%3Cp%3EWishing%20you%20the%20merriest%20of%20holidays,%20my%20friends!%3C/p%3E%3Cp%3EChristmas%20Stollen%202014%3C/p%3E%3Cp%3EI%20make%204%20batches%20of%20this%20recipe%20every%20Christmas%20with%20a%20friend.%20If%20you%20want%20to%20double%20the%20recipe%20below,%20you%20can%20mix%20the%20double-batch%20of%20fruit/nuts/rum%20together,%20but%20make%20each%20batch%20of%20dough%20separately%20as%20it%20is%20dense%20and%20you%20don%E2%80%99t%20want%20to%20overwork%20your%20mixer%E2%80%99s%20motor.%20Then%20split%20the%20fruit/nut%20mixture%20between%20the%20two%20batches.%20If%20making%204%20batches%20like%20me,%20then%20repeat%20the%20double-batch%20directions.%20No%20need%20to%20clean%20out%20your%20mixer%20bowl%20in%20between%20batches.%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EInstructions%3C/p%3E%3Cp%3EPlace%20slivered%20almonds%20in%20a%20dry,%20large%20skillet%20and%20toast%20over%20low%20heat.%20Stir%20often%20and%20watch%20closely%20so%20they%20do%20not%20burn.%20When%20light%20brown,%20transfer%20to%20a%20small%20bowl%20to%20cool.%20(Or%20you%20can%20purchase%20pre-toasted%20almonds)%3C/p%3E%3Cp%3ECombine%20raisins,%20currants,%20apricots,%20cherries,%20toasted%20almonds%20and%20rum%20in%20a%20medium%20bowl%20and%20let%20stand%20at%20least%201%20hour%20or%20overnight,%20stirring%20occasionally.%3C/p%3E%3Cp%3EPrepare%20a%20rimmed%20baking%20sheet%20with%20a%20silpat%20or%20parchment%20paper.%3C/p%3E%3Cp%3EStir%20together%202%20C.%20of%20the%20flour,%20yeast,%20sugar%20and%20salt%20in%20the%20large%20bowl%20of%20your%20mixer.%20Heat%20milk,%20water,%20butter%20and%20lemon%20zest%20in%20a%20small%20saucepan%20on%20low%20until%20butter%20just%20melts.%20Remove%20from%20the%20heat%20and%20let%20cool%20to%20115-120%20degrees,%20the%20optimal%20temperature%20for%20the%20yeast.%20Add%20liquid%20mixture%20to%20flour%20mixture%20along%20with%20eggs,%20almond%20extract%20and%20buttery%20sweet%20dough%20flavor%20(if%20using).%20Beat%20at%20low%20speed%20in%20a%20stand%20mixer%20with%20paddle%20attachment%20(or%20with%20a%20hand%20mixer)%20until%20flour%20is%20just%20incorporated.%20Switch%20to%20medium%20speed%20and%20beat%20until%20well%20combined.%20Change%20paddle%20attachment%20to%20dough%20hook.%3C/p%3E%3Cp%3EStir%201/3%20C.%20of%20the%20flour%20into%20the%20bowl%20with%20the%20soaked%20fruit%20and%20toss%20to%20coat.%20Add%20toasted%20almonds%20into%20the%20fruit%20mixture%20and%20toss%20to%20combine.%20Add%20fruit/nut%20mixture%20into%20the%20batter%20and%20mix%20on%20low%20with%20dough%20hook.%20Start%20adding%20flour%20in%201/4%20C.%20increments%20until%20the%20dough%20is%20moderately%20stiff%20and%20pulls%20from%20the%20side%20of%20the%20bowl.%20I%20typically%20end%20up%20adding%20an%20additional%202%20cups%20of%20flour%20to%20get%20the%20dough%20right.%3C/p%3E%3Cp%3ETurn%20dough%20onto%20a%20lightly%20floured%20surface%20and%20knead%20until%20smooth%20and%20elastic,%20about%205%20minutes;%20shape%20the%20dough%20into%20a%20ball.%20Add%201%20teaspoons%20of%20grapeseed%20oil%20to%20a%20large%20bowl%20and%20use%20your%20hands%20to%20coat%20the%20inside.%20Place%20the%20dough%20in%20the%20large%20bowl%20and%20turn%20to%20grease%20the%20entire%20outside%20of%20the%20dough.%20Cover%20and%20let%20rise%20in%20a%20warm%20place%20until%20doubled%20in%20bulk,%20about%201%20hour.%3C/p%3E%3Cp%3EPunch%20dough%20down,%20cover%20and%20let%20rest%2010%20minutes.%20Turn%20onto%20lightly%20floured%20surface%20and%20divide%20in%20half.%20With%20a%20rolling%20pin,%20roll%20each%20half%20into%20an%208%C3%9714%20inch%20oval.%20Fold%203%20inches%20of%20the%20dough%20in%20on%20one%20side%20and%20then%20fold%20in%20the%20dough%20on%20the%20otherside.%20Turn%20dough%20seam%20side%20down%20(or%20keep%20it%20seam%20side%20up%20for%20the%20look%20in%20the%20pictures%20above).%20Use%20the%20rolling%20pin%20to%20lightly%20press%20down%20on%20the%20folded%20dough%20and%20bring%20the%20folds%20together.%20Place%20loaves%20on%20the%20prepared%20baking%20sheet.%20Cover%20and%20let%20rise%20in%20a%20warm%20place%20until%20doubled%20in%20bulk,%20about%2030%20minutes.%20Preheat%20oven%20to%20350%20degrees%20F%20(or%20325%20degrees%20F%20for%20convection)%3C/p%3E%3Cp%3EUncover.%20Bake%20until%20loaves%20are%20golden%20and%20sound%20hollow%20when%20lightly%20tapped,%2020%20to%2030%20minutes%20(If%20using%20a%20convection%20oven%20bake%20at%20325%20degrees%20F%20for%2025-35%20minutes).%20Transfer%20to%20wire%20racks%20and%20brush%20with%20melted%20butter%20and%20sprinkle%20with%20powdered%20sugar.%20When%20the%20loaves%20have%20cooled,%20drizzle%20with%20more%20melted%20butter%20and%20sprinkle%20with%20another%20generous%20layer%20of%20powdered%20sugar.%20To%20store,%20wrap%20in%20parchment%20and%20then%20aluminum%20foil%20and%20let%20sit%20at%20room%20temperature
