A delicious traditional pudding typically served during Christmas using pressure cooker.

Ingredients:

Method:

1. Sift together maida, salt, baking soda, nutmeg powder, clove powder and cinnamon powder.

2. Combine butter with powdered sugar in a bowl and beat till fluffy.

3. Add the grated carrots, raisins and dates to the butter mixture.

4. Mix gently.

5. Now add rum and raisin essence.

6. Gradually add the maida, stirring gently.

7. Now add the cashewnuts, almonds and pistachios.

8. Mix well.

9. Transfer the contents to a greased pudding tin and close with a lid.

10. Pressure cook for 2 to 3 hours over medium flame till done.

11. Remove and serve hot with chocolate sauce.
