- Bakery Style Blueberry Muffins
- 6 T. butter
- ½ c. 2% milk
- 1 large egg
- 1 egg yolk
- ¼ t. vanilla
- 1 ½ c. flour
- ¾ c. sugar
- 1 ½ t. baking powder
- ¼ t. cinnamon
- ¾ t. fine sea salt
- 2 c. blueberries (individually frozen is best)
- For topping:
- 2/3 cup flour
- 2/3 cup powdered sugar
- 1/4 teaspoon cinnamon
- pinch of salt
- 5 tablespoons butter, melted

%3C/p%3E%3Cp%3ELast%20winter%20I%20was%20home-bound%20for%20about%20a%20week%20because%20of%20the%20weather.%20%20I%20went%20on%20a%20baking%20binge.%20%20%20Thanks%20to%20a%20lot%20of%20great%20foodie%20pals%20who%20post%20fantastic%20recipes,%20I%20kept%20quite%20busy.%20%20%20One%20of%20my%20favorite%20things%20to%20come%20out%20of%20my%20baking%20binge%20was%20a%20Streusel-Topped%20Banana%20Mufins%20at%20In%20Katrina%E2%80%99s%20Kitchen.%20%20%20I%20loved%20this%20streusel%20topping%20from%20Katrina%20and%20I%20decided%20to%20top%20off%20some%20blueberry%20muffins%20with%20this%20same%20topping.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20375%20degrees%20and%20generously%20butter%2012%20large%20muffin%20tins.%3C/p%3E%3Cp%3EMelt%20butter%20in%20a%20small%20saucepan%20over%20moderately%20low%20heat;%20remove%20from%20heat%20and%20let%20cool%20slightly.%20%20Add%20milk%20to%20butter%20and%20whisk.%20%20%20Add%20egg,%20yolk,%20and%20vanilla%20and%20whisk%20well%20to%20combine.%3C/p%3E%3Cp%3EIn%20a%20separate%20bowl,%20whisk%20together%20dry%20ingredients%20(flour,%20sugar,%20baking%20powder,%20cinnamon,%20and%20salt).%20%20%20Add%20milk%20mixture%20and%20stir%20until%20just%20combined.%20%20%20Gently%20fold%20in%20blueberries.%3C/p%3E%3Cp%3EFill%20tins%20%C2%BE%20full.%3C/p%3E%3Cp%3EMake%20topping.%20%20%20Whisk%20together%20flour,%20powdered%20sugar,%20cinnamon%20and%20salt.%20%20Add%20melted%20butter%20and%20stir%20together%20with%20a%20fork.%20%20Topping%20will%20be%20crumbly.%3C/p%3E%3Cp%3ETop%20each%20muffin%20with%20a%20generous%20amount%20of%20the%20topping.%20%20%20Bake%20until%20golden%20and%20a%20wooden%20pick%20inserted%20into%20center%20of%20muffin%20comes%20out%20clean,%2018-20%20minutes.%20%20%20Cool%20in%20pan%20for%2015%20minutes%20and%20then%20carefully%20remove%20to%20wire%20racks.%3C/p%3E%3Cp%3E(The%20basic%20blueberry%20muffin%20recipe%20also%20came%20from%20my%20beloved%20yellow%20Gourmet%20cookbook.)%3C/p%3E%3Cp%3EI%20placed%20these%20muffins%20in%20a%20wooden%20box%20lined%20with%20toille%20paper%20I%20bought%20at%20Williams-Sonoma%20many%20years%20ago.%20%20%20You%20can%20find%20some%20cool%20wooden%20boxes%20at%20some%20hobby%20stores.%20%20%20I%20am%20reusing%20a%20box%20that%20held%20some%20great%20olive%20oil%20and%20balsamic%20vinegar%20that%20was%20given%20to%20us%20as%20a%20gift.%20I%20don%E2%80%99t%20know%20where%20you%20stand%20on%20re-gifting,%20but%20reusing%20is%20acceptable%20at%20Christmas!%3C/p%3E%3Cp%3E(We%20will%20see%20how%20my%20early%20morning%20meeting%20crew%20likes%20these%20muffins%20along%20with%20the%20Yogurt-Flax%20Muffins%20from%20my%20last%20post.%20%20%20%20And,%20if%20you%20chocolate%20and%20bananas,%20stay%20tuned%20for%20the%20next%20muffin%20installment.)%3C/p%3E){kind=link}
