Christmas Candy Countdown~
Christmas Candy Countdown~ 24 Days of Christmas Candy
- *Peanut Brittle*
- 1/2 cup (1 stick) butter, plus 3 Tablespoons
- 2 cups sugar
- 1 cup light corn syrup
- 1/2 cup water
- 2 cups raw peanuts, with skins
- 2 heaping teaspoons baking soda
- 1. Mix sugar, butter and syrup in heavy pan. Boil to 235º (softball stage.)
- 2. Add 3 tablespoons butter and peanuts. Cool to crack (295º)
3. Remove from heat and add baking soda. Stir quickly and pour onto a buttered foil-lined jelly-roll pan. Let cool.
4. Break apart and store in dry place tightly covered. Yield: 2 pounds
