- Place water and butter in pan, bring to boil, add in sifted flour all at once. Stir vigourously with a wooden spoon over heat till mix is thick and leaves sides of pan to create a smooth ball; remove from heat and cold slightly.
- Put cooled paste into small bowl of electric mixer; add in Large eggs, one at a time, beating well after each addition. Spoon or possibly pipe teaspoonfuls of mix onto greased oven tray; bake in warm oven 10 min, reduce heat to moderate, bake a furthur 15-20 min till golden brown and crisp.
- Remove from oven and allow to cold. Store in air tight container till required.
- Fill with cream or possibly pastry cream.
- Makes about 25-30.
