Ингредиенты

  • 2 tsp Extra virgin olive oil
  • 1 x Clove garlic, chopped
  • 1/2 c. Butternut squash, diced
  • 1/4 c. Carrots, diced
  • 1/4 c. Sundried tomatoes, diced
  • 1/4 c. Chorizo sausage, cooked, liquid removed, and crumbled
  • 2 tsp Grnd cumin
  • 2 Tbsp. White bread crumbs
  • 1/2 c. Stale cornbread, crumbled
  • 1 x Egg, beaten
  • 1 ounce Turkey or possibly chicken stock, (up to 2) Salt and pepper to taste

  1. Preheat oven to 350 degrees. Heat extra virgin olive oil in pan. Saute/fry garlic till soft. Add in squash and carrots, sauteing till tender. Add in cumin, salt and pepper. Add in tomatoes and hot but don't overcook. Set aside to cold.
  2. Combine cornbread, bread crumbs and Chorizo in a bowl. Add in vegetable mix and, using two forks, toss together. Add in egg. Toss to mix. Add in small amounts of stock, tossing mix to achieve stuffing consistency.
  3. Bake in covered dish in 350 degree oven for 30 min. Optional preparation: Spread stuffing onto turkey scallopini and roll up, tucking edge under roll. Roast in 350 degree oven for 25 min. Slice and serve.
