Don’t you just LOVE the taste of chewy caramel? Combine that with dark chocolate and walnuts and these chocolate turtle candies are heavenly! Since traditional caramel is less than healthy, I cleaned up this recipe by using medjool dates in place of sugary caramel. Unlike those little caramel candies that contain corn syrup, refined sugar and other suspect ingredients, medjool dates are naturally sweet and are an excellent fill-in when it comes to substituting sugars and butters in recipes for sweets – especially caramel. All you need is a food processor to make this amazing caramel.

Medjool dates are loaded with fiber and they are naturally sweet, containing 4.5 grams of sugar per date. They are an excellent source of potassium, copper, magnesium, selenium and vitamins. So why not use dates as a chewy sweet caramel and toss those candy caramel squares to the curb? Trust me your taste buds will not know the difference.

Not only is this recipe a healthier choice, there is a short list of ingredients- dates, organic peanut butter, walnuts and dark chocolate.

Place dates into a food processor and process for approximately 1 1/2 to 2 minutes; until they form a ball

Add the peanut butter and process for 30 seconds more

Remove date mixture from food processor and refrigerate for 30 miniuttes

Place the nut pieces in clusters on a parchment lined cookie sheet (about 2 to 3 per cluster)

Take the date mixture and roll it into balls about ½ to ¾ inch in diameter; place over nut clusters and gently flatten so the mixture hugs the clusters

Melt the chocolate & coconut oil over a double boiler or microwave

Spoon about 1½ - tablespoons or enough to cover over the turtles

Place in refrigerator to firm up, remove from cookie sheet and store in fridge
