- Coat bottom of 10" springform pan with non-stick cooking spray.
- Sprinkle crumbled cookie crumbs on bottom of pan. Set aside.
- In food processor, add in cottage cheese and cream cheese and process till smooth. Add in 1 c. sugar, whole Large eggs, and vanilla. Process till smooth.
- Pour 3 c. of this mix into a large bowl. Add in cocoa and 2 Tablespoons sugar to the remaining mix in processing bowl, and process till smooth. Pour into medium bowl and set aside.
- Beat egg whites and cream of tartar till foamy. Add in remaining 2 Tablespoons sugar and beat till stiff. Fold 1/4 of the egg white mix into the cocoa mix. Fold the remaining egg white mix into the plain cheesecake mix.
- Spoon alternately into springform pan. Swirl.
- Bake at 325F for 50 min. Remove and cold 15 min, and then cover and refrigeratefor at least 8 hrs.
