%3C/p%3E%3Cp%3EI'm%20not%20going%20to%20tell%20you%20that%20these%20are%20healthy%20chocolate%20cookies.%20But%20I%20have%20made%20the%20effort%20to%20make%20them%20a%20bit%20lighter%20and%20they%20are%20awfully%20rich%20and%20chocolatey,%20so%20you're%20not%20likely%20to%20scarf%20down%20all%20of%20them%20in%20one%20sitting,%20which%20helps.%20Although,%20if%20you%20are%20a%20crisp%20cookie%20fan,%20they%20are%20pretty%20darned%20addictive.%3C/p%3E%3Cp%3EThe%20recipe%20was%20inspired%20by%20one%20I%20came%20across%20for%20%22copy%20cat%22%20Oreos.%20I%20don't%20know%20about%20you,%20but%20I%20have%20always%20preferred%20only%20the%20cookie%20part%20of%20the%20Oreo,%20not%20the%20cream.%20In%20fact,%20as%20a%20kid,%20I%20would%20get%20really%20excited%20if%20there%20were%20Oreo%20tops%20that%20had%20fallen%20off%20in%20the%20package%20because%20it%20saved%20me%20the%20step%20of%20pulling%20them%20off%20and%20scraping%20out%20the%20cream%20with%20my%20teeth%20(you%20know%20you%20did%20it,%20too!)%20in%20order%20to%20be%20left%20with%20a%20stack%20of%20chocolate%20wafers%20to%20eat.%20If%20you%20are%20nodding%20your%20head%20in%20agreement,%20you're%20going%20to%20love%20these%20chocolate%20snaps%20because%20that's%20almost%20exactly%20what%20they%20taste%20like!%3C/p%3E%3Cp%3EI%20like%20to%20use%20light%20spelt%20flour%20in%20this%20recipe%20because%20I've%20been%20experimenting%20with%20different%20kinds%20of%20grains%20and%20grain%20flours%20lately,%20but%20it%20is%20certainly%20not%20a%20requirement%20--%20I%20have%20also%20used%20all-purpose%20flour,%20whole%20wheat%20flour%20and%20gluten-free%20flour,%20all%20with%20equal%20success.%20No%20matter%20the%20flour,%20the%20cookies%20are%20still%20hugely%20chocolatey%20and%20snappy.%3C/p%3E%3Cp%3EAfter%20much%20experimentation,%20I%20think%20these%20chocolate%20snap%20cookies%20are%20best%20when%20you%20use%20a%20pretty%20small%20cutter%20(mine%20was%20just%20over%20an%20inch%20in%20diameter);%20the%20smaller%20size%20helps%20them%20stay%20crunchy,%20as%20opposed%20to%20having%20softer%20centers.%20Which%20I%20normally%20prefer%20in%20a%20cookie,%20but%20these%20are%20snap%20cookies%20and%20really%20all%20about%20the%20crunch.%3C/p%3E%3Cp%3EA%20la%20Oreos.%3C/p%3E%3Cp%3ESo,%20who's%20with%20me%20on%20preferring%20Oreos%20without%20the%20cream%20filling?%20Leave%20a%20comment:%20The%20Ninj%20wants%20to%20know.%3C/p%3E%3Cp%3EChocolate%20Snap%20Cookies%20(adapted%20from%20Chocolate-Covered%20Katie)%3C/p%3E%3Cp%3ENote:%20Despite%20chilling,%20this%20dough%20will%20be%20very,%20VERY%20sticky.%20I%20strongly%20suggest%20you%20roll%20it%20out%20on%20parchment%20paper%20and%20use%20extra%20cocoa%20to%20coat%20your%20rolling%20pin,%20as%20you%20would%20with%20flour%20(using%20the%20cocoa%20prevents%20the%20cookies%20from%20turning%20ashy%20white%20from%20the%20flour).%20Also,%20the%20recipe%20as%20written%20makes%20a%20ton%20of%20cookies%20so%20feel%20free%20to%20either%20half%20it%20or%20plan%20on%20freezing%20some%20of%20the%20cookies%20once%20baked.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EInstructions:%3C/p%3E%3Cp%3EPreheat%20oven%20to%20350%20degrees.%3C/p%3E%3Cp%3EWhisk%20together%20the%20first%205%20ingredients%20(the%20dry)%20in%20a%20large%20bowl.%20In%20another%20smaller%20bowl,%20whisk%20together%20the%20remaining%20ingredients%20(the%20wet)%20and%20then%20add%20them%20to%20the%20dry%20mixture,%20stirring%20with%20a%20spatula%20until%20well%20combined.%20Put%20the%20bowl%20in%20the%20refrigerator%20and%20chill%20for%20an%20hour%20(a%20little%20longer%20is%20fine).%3C/p%3E%3Cp%3EScrape%20the%20dough%20out%20of%20bowl%20and%20form%20into%20a%20ball%20with%20your%20hands%20(it%20will%20be%20VERY%20sticky%20so%20you%20might%20want%20to%20rub%20a%20little%20extra%20cocoa%20powder%20on%20your%20hands).%20Flatten%20out%20the%20dough%20ball%20ON%20A%20PIECE%20OF%20PARCHMENT%20PAPER%20ON%20TOP%20OF%20YOUR%20WORK%20SURFACE%20and%20then%20roll%20it%20out%20very%20thinly%20--%20the%20thinner%20you%20roll%20it,%20the%20crunchier%20your%20cookies%20will%20be.%20Dust%20your%20rolling%20pin%20with%20cocoa%20powder%20to%20prevent%20it%20from%20sticking.%3C/p%3E%3Cp%3EUsing%20a%20small%20round%20cutter,%20cut%20out%20cookies%20and%20place%20them%20on%20parchment-lined%20cookie%20sheets%20--%20give%20them%20a%20bit%20of%20space,%20as%20they%20will%20spread.%20Bake%20each%20sheet%20for%20about%2015%20minutes%20or%20until%20edges%20begin%20to%20crisp%20(the%20middles%20may%20still%20seem%20underdone).%20Cool%20another%205%20minutes%20on%20the%20pan%20and%20then%20transfer%20to%20a%20wire%20rack%20to%20cool%20completely.%3C/p%3E){kind=link}
