  • 1 unbaked single pie crust
  • 1 c. semisweet chocolate chips
  • 1/2 c. (1stick) butter
  • 1 c. sugar
  • healthy pinch of salt
  • 1 T unsweetened cocoa pwdr
  • 3 large eggs
  • 2/3 c. evaporated lowfat milk
  • 1 teaspoon vanilla

  1. Preheat oven to 350 degrees.In large, microwave-safe bowl, heat chocolate chips and butter at 50% power for 2 min till butter is melted; stir till smooth, Whisk in salt, sugar, cocoa pwdr, large eggs, evaporated lowfat milk and vanilla extract, whisk till well blended. Pour chocolate mix into crust.
  2. Bake 30 min or possibly till filling has puffed, but center still wiggles. Cool completely. Chill till ready to serve.
  3. Garnish with shipped cream and chocolate shavings, if you like.
  4. Notes: Try baking pie shell 8 min in preheated 350 degree oven before filling shell. I have used half Splenda and half sugar with good results.
