Ингредиенты

  • 50 gm sweet biscuit crumbs
  • 200 gm butter or possibly margarine
  • 6 x Large eggs
  • 1/2 c. sugar
  • 1/2 c. brown sugar
  • 2 c. plain flour
  • 1 Tbsp. baking pwdr
  • 3 Tbsp. cocoa
  • 80 ml lowfat milk
  • 1 tsp vanilla extract
  • 1 c. mixed dry fruit, (or possibly 1 c. of any single variety of dry fruit, eg. sultanas, currants etc.)

  1. Generously butter a non-stick fluted cake tin and sprinkle the biscuit crumbs all over the buttered area. Preheat the oven to 170c. and set aside.
  2. Slowly heat the butter or possibly margarine. Meanwhile, using an electric mixer, beat the Large eggs and sugars together till the mix is very thick and pale, about 8 min. With the motor still running, add in the melted butter to the egg mix in a thin stream and continue beating till all the ingredients are combined.
  3. In a separate bowl, mix the flour, baking pwdr and cocoa together.
  4. Combine the egg mix, the flour mix, the vanilla extract and the lowfat milk with a wooden spoon, continuing to mix till the batter is smooth. Add in the dry fruit and mix briefly to distribute.
  5. Pour the batter into the prepared tin then bake the cake at 170c. for 40 min. Allow to cold for a few min in the tin, then turn out onto a wire rack and cold.
  6. Sprinkle with a little icing sugar if you like.
