- 200 g bittersweet chocolate, chopped (preferably 70% cacao) (I used Scharffenberger)
- 100 g unsalted butter, in 6 or so pieces
- 2 large egg yolks
- 2 T liquor of choice (I used Starbucks coffee liquor)
- 2 pinches of chile powder/flakes of choice (I used Turkish Maresh flakes, smoky sweet but not too hot)
- 40 g nuts of choiceâI used hazelnuts
- 1 T unsweetened cocoa powder, good quality (I used Scharffenberger)
- 1 T granulated sugar, the finer the better
- 1 t coarse sea salt of choice, good quality (I used coarse French grey sea salt)
- confectionerâs sugar for rolling

,%20this%20was%20SO%20EASY.%20And%20the%20final%20result%20is%20SO%20IMPRESSIVE.%20Is%20my%20enthusiasm%20for%20this%20treat%20coming%20through%20yet?%3C/p%3E%3Cp%3EChocolate%20Salami%3C/p%3E%3Cp%3EPlace%20the%20butter%20and%20chocolate%20in%20a%20large%20microwave%20safe%20bowl.%20Microwave%20in%2030%20second%20increments%20at%2050%25%20powder%20until%20you%20can%20stir%20the%20mixture%20smooth.%20Be%20careful%20not%20to%20incorporate%20any%20air.%20Whisk%20together%20(gently)%20the%20egg%20yolks,%20chile%20pepper%20and%20liquor.%20When%20the%20chocolate%20is%20melted%20and%20smooth,%20whisk%20in%20the%20egg%20yolk%20mixture.%20Then%20whisk%20in%20the%20cocoa%20powder%20and%20sugar.%20Stir%20in%20the%20cookies%20and%20nuts.%20When%20the%20mixture%20is%20cooled%20but%20still%20mixable,%20stir%20in%20the%20salt%20(so%20as%20to%20prevent%20the%20salt%20from%20dissolving%20much).%3C/p%3E%3Cp%3EI%20highly%20encourage%20you%20to%20head%20over%20to%20Le%20Petrin%20to%20watch%20her%20video%20of%20how%20the%20roll%20is%20put%20together.%20What%20I%20did%20was%20to%20wait%20(what%20felt%20like%20quite%20a%20while)%20for%20the%20chocolate%20mixture%20to%20firm%20up%20enough%20to%20hold%20some%20shape.%20Then%20I%20made%20a%20vertical%20slit%20in%20a%20paper%20towel%20ring%20(the%20cardboard%20that%20hold%20the%20towels%20on%20and%20is%20left%20when%20the%20towels%20are%20gone%E2%80%93I%20save%20them%20for%20just%20this%20reason).%20Place%20plastic%20wrap%20on%20a%20clean%20workspace.%20Working%20quickly,%20scrape%20the%20chocolate%20mixture%20into%20a%20log-shaped%20roll%20on%20the%20wrap,%20quickly%20shaping%20with%20your%20hands%20to%20be%20more%20log-like.%20Don%E2%80%99t%20be%20too%20fussy%20Then%20wrap%20it%20with%20plastic%20wrap%20so%20that%20is%20forms%20a%20bulky%20roll%E2%80%93place%20that%20roll%20inside%20of%20the%20paper%20towel%20ring,%20forcing%20the%20roll%20to%20become%20perfectly%20(or%20nearly%20so)%20circular.%20This%20last%20step%20will%20be%20easier%20with%20a%20second%20person%20helping%E2%80%93my%20husband%20held%20the%20paper%20towel%20ring%20open%20while%20I%20placed%20the%20chocolate%20roll%20inside%20it.%20Wrap%20this%20in%20foil%20and%20place%20in%20the%20fridge%20to%20chill%20until%20hard%20enough%20to%20slice.%3C/p%3E%3Cp%3EWhen%20it%20is%20firm%20enough,%20first%20un-roll%20it%20and%20roll%20the%20whole%20thing%20in%20confectioner%E2%80%99s%20sugar.%20This%20keeps%20it%20from%20becoming%20sticky%20and%20beautifully%20mimics%20Old%20World%20salami.%20Thinly%20slice%20to%20serve.%3C/p%3E%3Cp%3Echocolate,%3C/p%3E%3Cp%3Echocolate%20salami,%3C/p%3E%3Cp%3Econfections,%3C/p%3E%3Cp%3Ecookies,%3C/p%3E%3Cp%3Eholiday%20leftovers,%3C/p%3E%3Cp%3Eleftovers,%3C/p%3E%3Cp%3Enuts%3C/p%3E){kind=link}
