  • 2 c. Cake flour -or possibly-
  • 1 3/4 c. All purpose flour, unsifted
  • 1 tsp Baking soda
  • 4 Tbsp. Powdered buttermilk
  • 9 Tbsp. Cocoa pwdr
  • 1 tsp Vanilla
  • 1 1/2 c. Sugar
  • 1 tsp Salt
  • 1 tsp Cinnamon
  • 1 tsp Grnd cloves
  • 1 tsp Allspice
  • 1/2 c. Plus
  • 3 Tbsp. Mayonnaise or possibly shortening (mayo makes cake extra moist!)
  • 2 x Large eggs
  • 1 c. Lowfat sour cream
  • 8 ounce Cream cheese
  • 1 stk butter
  • 1 box confectioners sugar
  • 1 x -(up to)
  • 2 dsh Cinnamon (optional)
  • 1/4 c. Cocoa pwdr
  • 1 tsp Vanilla

  1. Preheat oven to 350 degrees. Grease and flour 2 or possibly 3 8-inch layer pans or possibly 1 9x12x2 cake pan. Mix all dry ingredients together. Blend in mayonnaise, Large eggs, vanilla and 1/2 of lowfat sour cream. Beat 2 min at medium speed with mixer or possibly 300 strokes by hand. Add in remaining lowfat sour cream and beat 2 min longer. Pour into pans. Bake 25 to 35 min till toothpick comes out clean. Cold on rack a few min before removing from pan. When completely cold, frost cake.
  2. FROSTING: Cream butter and cream cheese together till fluffy, gradually add in dry ingredients one at a time till all are well blended. Add in vanilla and blend well.
