Julia is a chocolate lover and BC fan and even calls these “Bradley Cooper Brownies.” I, however, am a new fan of her site and I found these delicious brownies there.

Julia made these brownies gluten-free by using gluten-free oat flour. I ground my own oatmeal up (just whatever I had on hand in the pantry) so I don’t know if mine is truly gluten-free or not. I do know that these are pretty darn tasty.

I adapted her recipe a bit so my brownies are a bit less sweet.

Preheat oven to 350 degrees and prepare a 9 x 13″ pan with cooking spray.

In a small sauce pan, slowly heat coconut oil, coconut milk, agave nectar, peanut butter and cocoa powder. Keep on a low setting. As soon as the coconut oil melts and peanut butter is getting soft, throw it all in the bowl of a stand mixer. Use the paddle attachment and combine these melted ingredients until smooth.

Add the eggs, one at a time, mixing well between additions.

In a separate bowl, whisk together flour, baking powder and salt. Carefully add dry ingredients to the chocolate mixture and mix until just incorporated. Add chocolate chips and mix a bit more.

Pour the batter into the baking pan and spread evenly. Bake for 18-22 minutes.

These are a fudgy and moist brownie and I am adding these to my brownie repertoire.

In honor of his recent Oscar win, I would also like to rename these brownies. From this day forward they will be known as the Matthew McConaughey “Awright, awright, awright” Brownies. Sorry, Julia, I am more of a MC fan.
