,%20I%20am%20now%20beets'%20biggest%20fan.%20I%20like%20to%20eat%20them%20roasted,%20braised,%20raw%20and%20more.%20But%20I%20had%20never%20tried%20baking%20a%20cake%20with%20them%20until%20our%20friend,%20Lana%20(the%20one%20who%20turned%20me%20on%20to%20these%20amazing%20cookies)%20mentioned%20this%20cake%20to%20me%20last%20week.%3C/p%3E%3Cp%3EIt%20sounded%20good%20so%20I%20googled%20%22chocolate%20beet%20cake%22%20and%20found%20a%20recipe.%20Then%20I%20made%20it%20and%20I%20can%20tell%20you%20that%20it%20is%20truly%20divine.%20The%20almond%20meal%20gives%20it%20a%20fantastic%20crumb%20-%20the%20word%20%22toothsome%22%20comes%20to%20mind..%20The%20beets%20make%20it%20rich%20and%20moist,%20the%20orange%20provides%20the%20perfect%20sweet%20tartness%20and%20the%20chocolate%20does%20what%20chocolate%20always%20does%20-%20makes%20everything%20richly%20delicious.%20Between%20the%20dark%20chocolate,%20the%20orange%20and%20the%20almonds,%20the%20flavor%20profile%20is%20rather%20sophisticated.%20My%20two%20kids%20hated%20it!%20:(%20But%20the%20adults%20disagreed%20with%20them.%3C/p%3E%3Cp%3EIt's%20fairly%20simple%20to%20make.%20You%20cook%20the%20beet%20until%20it's%20quite%20soft%20(this%20can%20take%20a%20while...)%20then%20blitz%20it%20in%20the%20food%20processor%20into%20a%20puree.%3C/p%3E%3Cp%3EAdd%20the%20juice%20and%20zest%20of%20an%20orange.%20Such%20beautiful%20colors!%3C/p%3E%3Cp%3EStir%20in%20the%20almond%20meal,%20sugar,%20egg%20yolks%20and%20a%20few%20other%20bits%20and%20bobs.%20Beat%20the%20egg%20whites%20and%20fold%20them%20into%20the%20chocolate,%20then%20fold%20the%20chocolate%20and%20egg%20white%20mixture%20into%20the%20rest%20of%20it%20to%20complete%20your%20batter.%20Pour%20into%20a%20well-greased%20springform%20pan%20and%20bake.%3C/p%3E%3Cp%3EServe%20with%20fresh%20whipped%20cream,%20ice%20cream,%20chocolate%20sauce%20or%20all%20of%20the%20above,%20though%20whipped%20cream%20is%20my%20favorite.%20It%20needs%20that%20counterpoint%20of%20rather%20bland%20but%20wonderfully%20creamy%20richness.%3C/p%3E%3Cp%3EThe%20recipe%20is%20adapted%20from%20Sarah%20Raven's%20book,%20Fresh%20from%20the%20Garden.%20Although%20she%20has%20it%20listed%20in%20the%20summer%20section,%20given%20how%20well%20beets%20store%20and%20that%20winter%20is%20the%20season%20of%20citrus,%20this%20would%20be%20a%20perfect%20winter%20cake,%20too.%20I'll%20have%20to%20dust%20it%20off%20come%20February,%20methinks.%3C/p%3E%3Cp%3EAdapted%20from%20Sarah%20Raven's%20Fresh%20from%20the%20Garden%20Serves%208-10%3C/p%3E%3Cp%3EIngredients%3C/p%3E%3Cp%3EDirections%3C/p%3E%3Cp%3E1.%20Place%20the%20beet%20in%20a%20small%20pot%20of%20boiling%20water,%20making%20sure%20it%20is%20submerged%20and%20cook%20for%2030%20to%2040%20minutes,%20until%20soft.%20Peel%20and%20chop%20coarsely.%3C/p%3E%3Cp%3E2.%20Preheat%20oven%20to%20350%20degrees.%20Lightly%20oil%20an%208%22%20spring%20form%20cake%20pan%20and%20line%20the%20bottom%20with%20parchment%20paper.%3C/p%3E%3Cp%3E3.%20Melt%20the%20chocolate%20in%20a%20double%20broiler.%3C/p%3E%3Cp%3E4.%20Put%20the%20cooked%20beet%20in%20the%20food%20processor%20and%20puree%20briefly,%20leaving%20some%20texture.%20Transfer%20to%20a%20mixing%20bowl%20and%20stir%20in%20the%20orange%20juice%20and%20zest.%20Add%20the%20almonds,%20egg%20yolks,%20sugar,%20baking%20powder%20and%20melted%20chocolate.%20Mix%20thoroughly.%3C/p%3E%3Cp%3E5.%20In%20another%20bowl,%20beat%20the%20egg%20whites%20until%20firm%20but%20not%20dry,%20and%20fold%20them%20into%20the%20chocolate%20mixture.%3C/p%3E%3Cp%3E6.%20Spoon%20the%20batter%20into%20the%20lined%20pan.%20Bake%20for%2035%20to%2040%20minutes,%20then%20allow%20to%20cool%20in%20the%20pan.%20Unmold%20it%20and%20slice.%20Serve%20with%20fresh%20whipped%20cream,%20good%20vanilla%20ice%20cream%20and/or%20chocolate%20sauce.%3C/p%3E%3Cp%3EFor%20more%20delicious%20recipes,%20gardening%20ideas,%20foraging%20tips,%20and%20food-related%20inspiration%20%22like%22%20the%20Garden%20of%20Eating%20on%20Facebook,%20or%20follow%20me%20on%20Twitter%20and%20Pinterest.%3C/p%3E){kind=link}
